Summer heat turns lettuce bitter and pushes it to bolt, which is when it gives up on leaves and shoots a flower stalk straight up instead. Fall never asks it to do that.
A few reasons the season is so forgiving:
- They grow fast. Baby greens are usually ready 25 to 40 days after sowing, full-size leaves closer to 40 or 60.
- They germinate cold. Most salad greens will sprout in soil as cool as 40°F. That's the reason a late-summer sowing is still going strong long after your basil has thrown in the towel.
- The bugs leave. Not all of them, but enough that you stop patrolling.
- Frost helps. A light freeze makes kale sweeter, because the plant converts stored starch into sugar to keep its cells from rupturing, and spinach pulls the same trick. It is one of the very few times in gardening where the scary weather event is good news.
- Cut-and-come-again. Snip the outer leaves, leave the center, and the plant just keeps producing.

One more thing, and it's the tip I'd give if I could only give one: sow a short row every two weeks instead of one long row all at once. You'll never again face fifteen heads of lettuce maturing on the same Tuesday. It's called succession planting, it costs nothing, and it roughly doubles what you actually eat.
The One Thing All Three Are Hungry For
This is where people trip up. You're growing these plants for their leaves rather than a fruit or a root, so all three want the same thing, and they want a lot of it: nitrogen.
Nitrogen is what gives greens their color and their tender bite. Extension programs put it about as plainly as it can be put, which is that a plentiful nitrogen supply keeps salad green leaves tender and sweet, and that older leaves going pale on you is the plant saying it's running short. Skimp and your kale turns tough and faintly bitter. Nobody wants sad kale.
The usual fix causes its own problems, though. A scoop of synthetic salt fertilizer hands the plant a fast harsh dose that can scorch tender seedlings, and then a heavy rain washes most of what's left straight past the root zone. Which matters more here than it would for tomatoes, since greens are shallow-rooted by design.
